Classic German Butter Cookies for Any Season

Ingredients

Dough

  • 125 g cold butter
  • 200 g all-purpose flour (Type 405)
  • 100 g granulated sugar
  • 1 packet vanilla sugar
  • 1 large egg
  • all-purpose flour, for dusting

Glaze and decoration

  • 2 tablespoons lemon juice
  • 6 tablespoons powdered sugar
  • assorted decorative sugars

Preparation

  1. Knead cold butter, all-purpose flour, granulated sugar, vanilla sugar, and egg to form a smooth dough

  2. Chill the dough in the refrigerator for 30 minutes

  3. Line a baking sheet with parchment paper and preheat the oven to 180°C (350°F) conventional or 160°C (320°F) convection

  4. Dust the work surface with flour

  5. Roll out the dough to about 5 mm thickness on the floured surface

  6. Cut out cookies using cookie cutters of your choice

  7. Place the cookies directly on the baking sheet

  8. Bake in the preheated oven for 7 to 10 minutes per sheet

  9. Let the cookies cool completely

  10. Mix powdered sugar and lemon juice to make the glaze

  11. Spread the glaze over the cookies with a teaspoon

  12. Decorate with assorted decorative sugars

  13. Let the glaze set
