Creamy Tahini Lime Slaw

Ingredients

  • 1 can chickpeas drained
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 6 cherry tomatoes halved
  • 2 persian cucumbers diced
  • 1/4 red onion minced small
  • 1 avocado sliced
  • 2 baby bell peppers chopped
  • 5 mint leaves
  • 3 tsp toasted pepitas
  • 3 tbsp tahini
  • 2 pinches salt
  • Black pepper to your tastes
  • Juice of 1.5 limes
  • Chili and Lime seasoning for garnish (optional)

Preparation

  1. Add chickpeas, cabbages, tomatoes, cucumbers, onion, bell peppers, mint and pepitas to a large bowl

  2. Add tahini, salt, pepper and lime

  3. Mix with hands until well mixed. Taste for salt and adjust to your tastes

  4. Garnish with sliced avocado, mint leaves and chili and lime seasoning

Notes

  1. This slaw can be a meal or side dish due to high fiber, healthy fats, and protein.

  2. Serves 3 people.

  3. Ready in about 10 minutes.
