Creamy Vegan Mushroom Stroganoff
Ingredients
- 1 tbsp oil
- 1 small yellow onion
- Minced garlic
- 10-16 oz baby bella or preferred mushrooms
- 1 lb pasta (such as brown rice or quinoa pasta)
- 4 cups vegetable broth
- Salt, pepper, paprika to taste
- 3/4 cup milk of choice
- 2 tbsp flour
- 2 tbsp soy sauce
- 2 tsp dijon mustard
- Fresh parsley

- Nutritional yeast
Preparation
Heat 1 tbsp oil in a large pot over medium heat.
Sauté diced onions until fragrant.
Add in sliced mushrooms and minced garlic and sauté for 2-3 minutes.
Add in vegetable broth and spices and bring to a boil.
Stir in pasta and cook uncovered for 10-12 minutes or until pasta is al dente, stirring occasionally and adding 1/2 cup water if necessary.
In a separate bowl, whisk together milk, flour, soy sauce, and dijon mustard.
Once pasta is done cooking, add in milk mixture and stir consistently for 2-3 minutes until sauce thickens.
Serve with fresh parsley
Tips
Nutritional yeast can be added for extra flavor, but the dish is great without it.
This recipe can be prepared in one pot and takes about 20 minutes.
