Delicious Autumnal Apple Cinnamon Pancakes

Ingredients

Pancakes

  • 1/2 apple, grated
  • 1 tsp ground cinnamon
  • 1 egg
  • 3 tbsp spelt flour
  • 2 tbsp plant milk
  • a dash of vanilla extract

Compote

  • 1/2 apple, diced
  • desired amount of ground cinnamon
  • 1 tbsp maple syrup

Preparation

  1. In a bowl, whisk the egg and add the flour, milk and vanilla extract.

  2. Stir well then add the ground cinnamon.

  3. Add the grated apple then set aside.

  4. Make the compote - Chop the other half of the apple and add to a pan on a medium heat.

  5. Add the maple syrup and your desired amount of cinnamon.

  6. Stir on the heat for a few minutes then set aside.

  7. In another pan, add some olive oil and cook the pancakes 2-3 at a time, flipping once you see little bubbles start to form.

  8. Plate up and add the compote and serve with Greek yoghurt too (optional).
