Delicious Autumnal Apple Cinnamon Pancakes
Ingredients
Pancakes
- 1/2 apple, grated
- 1 tsp ground cinnamon
- 1 egg
- 3 tbsp spelt flour
- 2 tbsp plant milk
- a dash of vanilla extract
Compote
- 1/2 apple, diced
- desired amount of ground cinnamon
- 1 tbsp maple syrup
Preparation
In a bowl, whisk the egg and add the flour, milk and vanilla extract.
Stir well then add the ground cinnamon.
Add the grated apple then set aside.
Make the compote - Chop the other half of the apple and add to a pan on a medium heat.
Add the maple syrup and your desired amount of cinnamon.
Stir on the heat for a few minutes then set aside.
In another pan, add some olive oil and cook the pancakes 2-3 at a time, flipping once you see little bubbles start to form.
Plate up and add the compote and serve with Greek yoghurt too (optional).
