Banana and Apple Mini Pancakes

Ingredients

  • 1 ripe banana, mashed
  • 1 apple, peeled and grated
  • 1 egg
  • 1/2 tsp cinnamon
  • 2 tbsp flour

Preparation

  1. In a bowl, mix all ingredients together to form a thick batter

  2. Heat some butter or oil in a non stick pan over a low heat. Drop tablespoons of the batter into the pan and gently flatten to make circles

  3. Cook for 2-3 mins, then flip when bubbles begin to form on the surface

  4. Cook for another 2 mins on the other side

  5. Allow to cool on a wire rack then serve with your side of choice
