Easy and Healthy Peanut Butter Waffles

Ingredients

  • 1 1/2 cups wholemeal spelt flour
  • 1/4 cup peanut butter
  • 2 TBS coconut sugar
  • 2 tsp baking powder
  • 1 + 1/2 cups almond milk
  • 3 TBS olive oil
  • pinch of salt

Preparation

  1. Preheat waffle maker. You may also pre-heat oven to 180º to keep waffles warm if making double batch

  2. Combine everything in medium sized bowl

  3. Spoon batter into the centre of the waffle maker plate. Ensure batter is evenly spread out. Close lid and wait until cooked

  4. Gently remove and place on wire rack in the oven until remaining are made

  5. Serve your waffles with fresh blueberries, raspberries then top with pure maple syrup
