Easy Homemade Refried Beans

Ingredients

  • 2 cups dry pinto beans
  • 3 cups filtered water
  • 1 jar chipotle salsa

Preparation

  1. Sort and rinse pinto beans well.

  2. In a large bowl cover beans with 2 inches of water and soak for at least 24 hours, changing soaking water every 12 hours.

  3. Drain and rinse well.

  4. Add beans to pressure cooker with 6 cups water and 1 jar of chipotle salsa.

  5. Set pressure cooker to manual for 30 minutes and let steam release naturally.

  6. Be careful! Ladle about 2 cups of cooking water out of the cooked beans.

  7. Purée with handheld blender or blend in batches in a blender until creamy.
