Easy Homemade Refried Beans
Ingredients
- 2 cups dry pinto beans
- 3 cups filtered water
- 1 jar chipotle salsa
Preparation
Sort and rinse pinto beans well.
In a large bowl cover beans with 2 inches of water and soak for at least 24 hours, changing soaking water every 12 hours.
Drain and rinse well.
Add beans to pressure cooker with 6 cups water and 1 jar of chipotle salsa.
Set pressure cooker to manual for 30 minutes and let steam release naturally.
Be careful! Ladle about 2 cups of cooking water out of the cooked beans.
Purée with handheld blender or blend in batches in a blender until creamy.
