Easy One-Pan Asian Noodle Dish

Ingredients

  • 8 oz rice noodles
  • 1/2 block tofu cubed
  • 1 sliced bell pepper
  • 1 cup sliced shiitake mushrooms
  • 1 cup edamame
  • 1 cup chopped bok choy

Garnish

  • 1 tbsp sesame seeds
  • 1 tbsp scallions
  • 1 tbsp cilantro

Sauce

  • 16 oz water
  • 1/4 cup tamari or soy sauce
  • 1/4 cup teriyaki sauce
  • 1 tbsp chili garlic paste or sriracha
  • 1 tbsp toasted sesame oil

Preparation

  1. Preheat the oven to 400F.

  2. Pour and mix the sauce ingredients in an oven-safe casserole dish.

  3. Add the noodles, tofu, and vegetables.

  4. Put in the oven for 20-25 minutes until the sauce is absorbed and the noodles are cooked.

  5. Add the garnish.

  6. Enjoy.

Tips

  1. Do not overcook, as it may become mushy.
