Easy One-Pan Asian Noodle Dish
Ingredients
- 8 oz rice noodles
- 1/2 block tofu cubed
- 1 sliced bell pepper
- 1 cup sliced shiitake mushrooms
- 1 cup edamame
- 1 cup chopped bok choy
Garnish
- 1 tbsp sesame seeds
- 1 tbsp scallions
- 1 tbsp cilantro
Sauce
- 16 oz water
- 1/4 cup tamari or soy sauce
- 1/4 cup teriyaki sauce
- 1 tbsp chili garlic paste or sriracha
- 1 tbsp toasted sesame oil
Preparation
Preheat the oven to 400F.
Pour and mix the sauce ingredients in an oven-safe casserole dish.
Add the noodles, tofu, and vegetables.
Put in the oven for 20-25 minutes until the sauce is absorbed and the noodles are cooked.
Add the garnish.
Enjoy.
Tips
Do not overcook, as it may become mushy.
