Easy Vegan Banana Ceviche

Ingredients

  • 3 green bananas
  • 1 ounce green corn
  • 1 purple onion
  • 1/2 ounce red bell pepper
  • 1 ounce lady finger pepper
  • 1 teaspoon minced ginger
  • 1/2 teaspoon minced garlic
  • 1/2 pack cilantro
  • 2 ounces lemon
  • oil to taste
  • optional additions as desired

Preparation

  1. Cut the bananas in half and seal both sides in a frying pan with a thread of olive oil, then cut them into medium cubes and set aside.

  2. Cook the green corn for approximately 25 minutes in water with salt, defrost if necessary, and toast it over heat using a metal sieve.

  3. Cut the purple onion as thinly as possible, the red bell pepper, and the lady finger pepper, and prepare the ginger, garlic, and cilantro.

  4. Mix all ingredients and season with lemon juice, salt, and olive oil, then garnish with small coriander leaves on top.
