Fruit to Pancakes

Ingredients

  • 1 cup coconut milk+1 tbsp apple cider vinegar
  • 1 cup rice flour
  • 1 tbsp flax meal
  • 1 tbsp coconut oil
  • 1 tbsp coconut sugar
  • 1/2 tsp of baking soda

Preparation

  1. Preparation mix everything and let it sit for at least 15 minutes

  2. Preheat the pan to medium heat and lightly grease with coconut oil

  3. Add a spoonful of batter to the pan and let it cook on the pan for about 1 minute or till looks dry on the top, flip it over, cook for additional 30 sec

  4. Transfer on the plate and continue with the rest of the batter
