Ginger Sesame Seitan with Pineapple Quinoa
Ingredients
Sauce
- 1/4 cup coconut aminos (or soy)
- 1/4 cup rice vinegar
- 1/4 cup maple syrup
- 1/4 cup hoisin sauce
- 2 tablespoons grated fresh ginger
- 2 tablespoons corn starch
- 1/2 cup water
- 2 teaspoons sesame oil
Seitan
- 1 pound seitan
- 1/4 cup corn starch
- 2-4 tablespoons avocado oil
- Sesame seeds for topping
Base
- Quinoa
- Pineapple
- Vegetables
Preparation
Mix all sauce ingredients together in a saucepan.
Heat while whisking until thick. Turn off heat and set aside.
Toss seitan strips in corn starch until coated.
Heat 2-4 tablespoons of avocado oil in a saute pan.
Fry seitan until all sides are evenly browned.
Pour ginger sesame sauce over seitan until fully coated, then cook for about 5 minutes until no loose sauce remains.
Top with sesame seeds.
Preparing the base
Cook quinoa according to package instructions and mix with pineapple.
Prepare vegetables as desired, such as by sautéing or serving raw.
Assemble the dish by placing the quinoa mixture in a bowl and topping with the cooked seitan.
Tips
Use pre-grated ginger for convenience, such as from The Ginger People brand.
