Healthy Iron-Rich Lentil Salad
Ingredients
- 1.5 cups lentils, rinsed
- 1/2 red onion, diced
- 2 green onions, diced
- 1 carrot, diced
- 1 sprig parsley, diced
- 1 pomegranate, seeded
- 1 cup spinach, diced
- 2 lemons, juiced (used separately)
- Fresh black pepper, to taste
- Ground garlic, to taste
Optional
- Cayenne pepper, to taste
Preparation
Chop the red onion, green onions, carrot, parsley, spinach, and seed the pomegranate.
Soak the lentils in cold water overnight with the juice of one lemon, then rinse until the water is clear.
Place the lentils in a pot with water, add a bit of cumin seed or garlic to reduce bloating, and stir well until brought to a boil.
Cover the pot, reduce heat to a simmer, and stir regularly until the lentils are tender, adding water if needed.
Add the chopped vegetables, pomegranate seeds, juice from the second lemon, fresh black pepper, ground garlic, and optional cayenne pepper to taste, then mix and serve.
