Tabouli Salad with a Kale Twist

Ingredients

  • 2 cups cooked bulgur wheat (red or white)
  • 1 can chickpeas, drained and rinsed
  • 2 bunches of parsley, finely chopped
  • 1 bunch of kale, stemmed and finely chopped
  • 1 bunch of green onions, thinly sliced
  • 1 handful of mint leaves, finely chopped
  • 1 tomato, chopped small
  • 1 cucumber, chopped small
  • 2 large lemons, juiced
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • a pinch of salt & pepper

Preparation

  1. Prepare bulgur as directed on package

  2. When bulgur is cooled, combine salad ingredients together in a large bowl

  3. Whisk together dressing ingredients and toss with salad

  4. This is even great on its own for a well balanced meal?
