Homemade Vietnamese Pho Soup

Ingredients

  • 1 white onion
  • 1 3-inch piece ginger
  • 3 star anise
  • 2 cinnamon sticks
  • 5 whole cloves
  • veggie broth
  • 2 tablespoons tamari
  • roasted tofu
  • noodles
  • bok choy
  • mint
  • basil
  • shiitake mushrooms
  • sriracha

Preparation

  1. Char the onion and ginger, then set them aside.

  2. In a large stock pot over medium-high heat, toast the star anise, cinnamon sticks, and cloves.

  3. Place all the charred and toasted items in a piece of cheesecloth, wrap tightly, and place it in the veggie broth.

  4. Add 2 tablespoons of tamari to the broth.

  5. Simmer the broth for 30 to 35 minutes.

  6. Fill bowls with roasted tofu, noodles, bok choy, mint, basil, and shiitake mushrooms.

  7. Drizzle with sriracha.

Notes

  1. Once the broth is made, this is a quick and easy meal, and store-bought broth works just as well.
