No-Bake Chocolate and Black Tea Cheesecakes

Ingredients

Base

  • 75g crushed oreo
  • 40g melted butter

Filling

  • 300g soften cream cheese
  • 60g melted white chocolate
  • 45g sugar of choice
  • 1/8 tsp salt
  • 200g whipping cream
  • 2 English breakfast tea bags
  • 45g melted dark chocolate

Preparation

  1. Combine base ingredients.

  2. Firmly press the mixture into the base of the molds.

  3. Place in the freezer to set.

  4. Heat the whipping cream and tea bags in a saucepan.

  5. Once boiling turn off the heat.

  6. Let steep for 10 minutes.

  7. Cream the cream cheese, sugar and salt on medium speed until perfectly smooth and creamy.

  8. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed.

  9. Add melted chocolate and black tea whip cream mixture, whisk until no lumps and smooth.

  10. Divide mixture into two.

  11. Add the melted chocolate to the second half and mix well.

  12. Divide and spread filling on the crust and place in the freezer to set.

  13. Remove cheesecake from the freezer.

  14. Decorate with more raspberries and serve.
