Simplest No-Bake Chocolate Yule Log

Ingredients

  • 400g dark chocolate (can include leftover Christmas chocolates)
  • 50g coconut oil or margarine
  • 100g hazelnut puree
  • 200g broken biscuits (e.g., petit brun or McVities, vegan)
  • 50g shelled pistachios
  • 100g praline or sugar
  • 40g chocolate puffed rice
  • 70g cranberries

Preparation

  1. Melt the chocolate, coconut oil, and hazelnut puree in a double boiler

  2. Once melted, add the broken biscuits, shelled pistachios, praline or sugar, chocolate puffed rice, and cranberries and mix well

  3. Pour the mixture into a mold and refrigerate for 1 hour then decorate as desired

Tips

  1. Use a silicone mold or a cake mold for easy removal

  2. Feel free to add any uneaten Christmas chocolates to the mixture
