Easy Vegan Oreo Cheesecake

Ingredients

Crust

  • 2 packs Oreos (28 pieces)
  • 1/3 cup plant butter

Filling and toppings

  • 1 3/4 cups coconut milk
  • 1 1/2 cups dark chocolate
  • A pinch of salt
  • 3 tablespoons maple syrup
  • 10 Oreo cookies
  • Fresh blackberries

Preparation

  1. Put the Oreos in a food processor and grind to crumbs, then transfer to a bowl

  2. Heat the plant-based butter in a pan and add it to the Oreo crumbs

  3. Mix with your hands until combined and press into the bottom and sides of the cake pan

  4. Combine the filling ingredients in a saucepan and heat until it forms a thick chocolate mixture

  5. Pour the filling over the crust and allow it to cool slightly

  6. Refrigerate the cake pan for at least 3 hours and garnish with blackberries and additional Oreos before serving
