No-Bake Vegan Oreo Cheesecake
Ingredients
Crust
- 2 packs Oreos (28 pieces)
- 1/3 cup plant butter
Filling and toppings
- 1 3/4 cups coconut milk
- 1 1/2 cups dark chocolate
- A pinch of salt
- 3 tablespoons maple syrup
- 10 Oreo cookies
- Fresh blackberries
Preparation
Put the Oreos in a food processor and grind them to crumbs, then transfer to a bowl.
Heat the plant-based butter in a pan and add it to the Oreo crumbs.
Mix with your hands until well combined and press into the bottom and sides of the cake pan.
Combine the filling ingredients in a saucepan and heat until a thick chocolate mixture forms.
Pour the filling over the crust and allow it to cool slightly.
Refrigerate the cake pan for at least 3 hours and garnish with fresh blackberries and additional Oreo cookies before serving.
Notes
This cheesecake uses only 7 ingredients and is ready in about 3 hours.
It is a no-bake vegan dessert that is easy to prepare.
