Healthy No-Bake Energy Cookies
Ingredients
- 1 cup rolled oats or almond flour
- 1/2 cup drippy natural peanut butter or almond butter
- 1/4 cup maple syrup
- 2 tablespoons ground flax seeds
- 1/4 cup toasted shredded coconut
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1 tablespoon cacao nibs or chocolate chips
- 1-2 teaspoons chia seeds
- Pinch of salt (optional, if nut butter is unsalted)
- Dairy-free dark chocolate and coconut oil for drizzling (optional)
Preparation
Combine all ingredients in a large bowl until well mixed; use hands if needed.
Roll the mixture firmly into balls, place on a parchment paper-lined baking sheet, and press down to form cookie shapes.
If desired, melt dairy-free chocolate chips with a little coconut oil in the microwave in 30-second increments, stirring between each, until melted.
Drizzle the melted chocolate over the cookies.
Freeze or chill for at least 30 minutes until set; if using almond flour, it may take only 10-15 minutes.
Tips
Use drippy natural peanut butter for the best texture.
Chilling time may be shorter if using almond flour instead of oats.
