Healthy No-Bake Energy Cookies

Ingredients

  • 1 cup rolled oats or almond flour
  • 1/2 cup drippy natural peanut butter or almond butter
  • 1/4 cup maple syrup
  • 2 tablespoons ground flax seeds
  • 1/4 cup toasted shredded coconut
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cacao nibs or chocolate chips
  • 1-2 teaspoons chia seeds
  • Pinch of salt (optional, if nut butter is unsalted)
  • Dairy-free dark chocolate and coconut oil for drizzling (optional)

Preparation

  1. Combine all ingredients in a large bowl until well mixed; use hands if needed.

  2. Roll the mixture firmly into balls, place on a parchment paper-lined baking sheet, and press down to form cookie shapes.

  3. If desired, melt dairy-free chocolate chips with a little coconut oil in the microwave in 30-second increments, stirring between each, until melted.

  4. Drizzle the melted chocolate over the cookies.

  5. Freeze or chill for at least 30 minutes until set; if using almond flour, it may take only 10-15 minutes.

Tips

  1. Use drippy natural peanut butter for the best texture.

  2. Chilling time may be shorter if using almond flour instead of oats.
