Nutty Red Rice Salad with Crispy Onions

Ingredients

  • 75g red rice
  • 3-4 stalks of cavolo nero
  • 5-6 cherry tomatoes
  • 3-4 chestnut mushrooms
  • 2 cloves of garlic
  • 1 inch piece of ginger
  • 1/2 a red chilli
  • 30g crispy onions
  • 1 tbsp soya sauce
  • 1 tbsp sesame oil
  • 1 tsp rice wine vinegar

Preparation

  1. Rinse the rice and put it in a pan with three times the volume of water and some salt, bring to a boil and then reduce heat and simmer for 20 minutes.

  2. Meanwhile, finely chop garlic, chilli and ginger. Slice the mushrooms into thick slices, halve the tomatoes, and chop the cavolo nero into chunks.

  3. Heat oil in a pan and saute the mushrooms for about 5-7 minutes, then add the garlic, chilli and ginger and saute for another minute or two. Add in the cavolo nero and tomatoes.

  4. When the rice is ready, drain it and add it to the pan of vegetables. Mix well and add the sesame oil, vinegar and soy sauce. Serve and top with crispy onions.

Notes

  1. Crispy fried onions are an excellent addition and work especially well with this nutty red rice salad filled with tomatoes, mushrooms, cavolo nero, ginger, and garlic.
