Blistered Green Beans with Whipped Tahini

Ingredients

  • 500g extra fine green beans

Dressing

  • 2 tbsp sesame oil
  • 1 clove of garlic
  • 1 tbsp rice wine vinegar
  • 1 tbsp light soy
  • 1 tbsp dark soy
  • 1 spring onion
  • A pinch of sugar

Whipped tahini

  • 3 tbsp tahini
  • Juice of 1/2 lemon
  • 1 clove of garlic
  • Pinch of salt
  • 100-200ml cold water

Toppings

  • Chilli crisp
  • Sesame seeds
  • Fried onions
  • Additional lemon

Preparation

  1. Add all of the whipped tahini ingredients to a blender, reserving the water. Start blending and then add the water little by little until a thick, smooth consistency has been reached.

  2. Mix together the dressing ingredients and set aside.

  3. In a hot pan with olive oil, blister the green beans for about 7 minutes (in batches if necessary). Remove from the heat and toss in the dressing.

  4. On a large plate, spread the whipped tahini, use tongs to add the green beans on top and then finish with chilli crisp, sesame seeds and fried onions.
