One-Pan Red Sauce Penne Pasta

Ingredients

  • Some olive oil
  • 5-6 finely chopped garlic cloves
  • Some onion cut in cubes
  • Salt as per taste
  • Some chopped broccoli, zucchini, red and yellow bell peppers, and mushrooms
  • Some oregano and chilli flakes
  • 4 medium tomatoes, coarsely ground (puree)
  • Approximately 2 cups water
  • 1 teaspoon sugar
  • 2 cups penne pasta (approximately 200 grams)
  • 2 tablespoons fresh cream
  • Some grated cheese and basil leaves

Preparation

  1. Heat up the pan and add some olive oil.

  2. Add 5-6 finely chopped garlic cloves.

  3. Add some onion cut in cubes.

  4. Add salt as per taste and sauté.

  5. Add chopped broccoli, zucchini, red and yellow bell peppers, and mushrooms.

  6. Add some oregano and chilli flakes and mix.

  7. When veggies are slightly cooked, add 4 medium tomatoes pureed coarsely.

  8. Mix well, cover with a lid, and cook for 5-7 minutes. Do not overcook the veggies.

  9. Add approximately 2 cups of water.

  10. Add 1 teaspoon of sugar to balance sourness.

  11. When it starts boiling, add 2 cups of penne pasta.

  12. Mix, cover with a lid, and cook for approximately 7-10 minutes. Check if pasta is cooked.

  13. Add 2 tablespoons of fresh cream when pasta is cooked.

  14. Turn off the heat and add some cut basil leaves.

  15. Transfer to a serving plate and top with some grated cheese and basil leaves.
