Easy One-Pot Vegetable Pasta
Ingredients
- Some oil
- 3-4 finely chopped garlic cloves
- 1 medium sized finely chopped onion
- Salt as per taste
- Veggies as per your choice: some finely chopped carrots, french beans, colorful capsicum, beetroot, broccoli and tomatoes
- Some boiled sweet corn
- Some boiled chole and rajma
- Oregano and chilli flakes as per taste
- 3-4 medium sized tomato puree
- 1 cup water
- 1 portion spaghetti pasta or vermicelli
- 2 teaspoons sugar (optional)
- Some cut basil leaves
- Some finely chopped spinach (optional)
Garnishes
- Grated cheese
- A basil leaf
Preparation
Heat up the pan and add some oil.
Add 3-4 finely chopped garlic cloves.
Add 1 medium sized finely chopped onion.
Add salt as per taste.
When onion is semi cooked, add veggies such as finely chopped carrots, french beans, colorful capsicum, beetroot, broccoli and tomatoes and mix.
Add some boiled sweet corn.
Add some boiled chole and rajma.
Add some oregano and chilli flakes.
Cover the lid and cook for 5-7 minutes.
Add 3-4 medium sized tomato puree and mix.
Cover the lid and cook on medium flame for 10 minutes.
Add 1 cup water and mix to get soupy consistency.
Add spaghetti pasta or vermicelli, breaking it as you add.
Cover the lid and let the spaghetti cook well.
Add 2 teaspoons sugar if desired.
Add some cut basil leaves.
Turn off the heat and add some finely chopped spinach.
Take it in a serving bowl and garnish with grated cheese and a basil leaf.
Tips
Add veggies and seasonings as per your choice.
Can also use pizza or Mexican seasonings.
Serve hot with garlic toasts or enjoy as is.
