Peanut Butter Banana Nice Cream Bars
Ingredients
- 4 frozen bananas
- 3 tbsp creamy peanut butter
- 1 1/2 cups chocolate chips
- 2 tbsp coconut oil
Preparation
Blend frozen bananas and peanut butter in a food processor until creamy with no chunks.
Scoop the mixture into a parchment-lined loaf pan and freeze for at least 4 hours.
When frozen, cut into squares and place on a parchment-lined baking sheet then return to freezer while preparing chocolate.
Combine chocolate chips and coconut oil in a microwave-safe bowl and melt in 30-second increments until smooth.
Coat the squares in melted chocolate and place back on the baking sheet.
Freeze for another 30 minutes to set and enjoy.
