Peanut Butter Dates Popsicles
Ingredients
- 10 Medjool dates
- 3 tablespoons peanut butter
- 1 1/2 cups soy milk or any plant-based milk
- Pinch of salt
- Nuts of your choice for crunch (optional)
Preparation
Remove the pits from the dates and soak them for 2 hours to improve texture.
In a blender, add the soaked dates, peanut butter, soy milk, and a pinch of salt, then blend until creamy.
Pour the mixture into popsicle molds, and when half full, gently press in some chopped nuts if desired, then fill the molds.
Insert wooden sticks and freeze for 4 to 5 hours or overnight.
