Creamy Mango Chickpea Popsicles

Ingredients

  • 1/2 cup cooked chickpeas and skin taken off
  • 1-11/2 cups reduced mango
  • 3 tbsp tahini/cashew butter
  • 2 teaspoons vanilla extract
  • 1 cup thick coconut milk
  • 6 tablespoons maple syrup or honey
  • Pinch of salt

Preparation

  1. Blend all ingredients until completely smooth

  2. Pour into molds and freeze until solid

Tips

  1. Removing the chickpea skin removes any residual flavor in the chickpeas if any and is worth the effort

  2. Cashew butter can be used instead of tahini based on preference
