Revamped Poke Bowl with Salmon and Veggies

Ingredients

  • About 60g cooked pearl barley per person
  • Cooked red bell pepper
  • Cooked zucchini
  • Cooked eggplant
  • Green peas, fava beans, or edamame
  • Cherry tomatoes
  • Cooked and shredded salmon fillet
  • A few mozzarella balls
  • A bit of red onion
  • Olive oil (for cooking and dressing)
  • Balsamic vinegar
  • Lemon juice or a drizzle of lemon

Preparation

  1. Cook the mixed vegetables (red bell pepper, zucchini, eggplant) in a little olive oil until tender.

  2. If not already prepared, cook and shred the salmon fillet.

  3. In a bowl, combine the cooked pearl barley, cooked vegetables, green peas or alternative, cherry tomatoes, shredded salmon, mozzarella balls, and red onion.

  4. Drizzle with olive oil, balsamic vinegar, and lemon juice.

  5. Toss gently to mix and serve immediately.
