Roasted Vegetables and Black Bean Hummus Combo

Ingredients

Black bean dip

  • 1 cup black beans
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon pepper seasoning

Roasted vegetables

  • Spinach
  • Green beans
  • Eggplant
  • Butternut squash
  • Coconut oil (for spraying)
  • Garlic salt

Preparation

  1. Place all black bean dip ingredients in a small bowl and mash with a fork.

  2. Preheat oven to 400°F. Spray green beans, eggplant, and butternut squash with coconut oil and season with garlic salt.

  3. Bake the vegetables for 35-40 minutes, flipping halfway through.

  4. Assemble the meal by using spinach as a base and adding the roasted vegetables and black bean dip.
