Roasted Vegetables and Black Bean Hummus Combo
Ingredients
Black bean dip
- 1 cup black beans
- 1 tablespoon nutritional yeast
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon pepper seasoning
Roasted vegetables
- Spinach
- Green beans
- Eggplant
- Butternut squash
- Coconut oil (for spraying)
- Garlic salt
Preparation
Place all black bean dip ingredients in a small bowl and mash with a fork.
Preheat oven to 400°F. Spray green beans, eggplant, and butternut squash with coconut oil and season with garlic salt.
Bake the vegetables for 35-40 minutes, flipping halfway through.
Assemble the meal by using spinach as a base and adding the roasted vegetables and black bean dip.
