Baked Plantain and Black Bean Bowl

Ingredients

  • 2 cups cooked black beans
  • 1 cup cooking liquid
  • 2 teaspoons nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon adobo seasoning
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • Plantains
  • Corn
  • Zucchini
  • Avocado

Preparation

  1. Cook a batch of black beans in the Instant Pot.

  2. Use 2 cups of the cooked black beans and add 1 cup of the cooking liquid.

  3. Add 2 teaspoons nutritional yeast, 1/2 teaspoon garlic powder, 1/2 teaspoon adobo seasoning, 1/4 teaspoon smoked paprika, and 1/4 teaspoon dried oregano.

  4. Cook the mixture in a saucepan for 3-4 minutes and mash a small amount of the beans to thicken.

  5. Bake the plantains until golden and soft

  6. Roast the zucchini until tender

  7. Prepare the corn, such as steaming or using canned

  8. Slice the avocado.

  9. Assemble all components in a bowl
