Silky Hummus with Ice Cubes and Zaatar Pitta Chips
Ingredients
Pitta chips
- 2 flat breads
- 2 tbsp oil
- 2 tsp zaatar
Houmous
- 240g jarred chickpeas, drained
- 1 garlic clove
- 2 roasted red peppers
- 1 tbsp tahini paste
- 1 tbsp harissa paste
- 2 tbsp olive oil
- 1 tsp salt
- 2 ice cubes
- Parsley to garnish
Preparation
Preheat the oven to 180 degrees.
Roughly tear the flatbreads and toss with the oil and zaatar spice.
Spread on a baking tray and bake for 8-10 minutes until they start to crisp up.
While the pitta chips are cooking, add all hummus ingredients except the ice cubes to a blender.
Blitz until smooth, then add the ice cubes and blitz again for a silky finish.
Plate up the hummus with a drizzle of olive oil and some parsley.
Tips
Adding ice cubes ensures a silky smooth hummus texture.
This recipe serves 2 with extra hummus leftover.
Total preparation time is 20 minutes.
