Silky Hummus with Ice Cubes and Zaatar Pitta Chips

Ingredients

Pitta chips

  • 2 flat breads
  • 2 tbsp oil
  • 2 tsp zaatar

Houmous

  • 240g jarred chickpeas, drained
  • 1 garlic clove
  • 2 roasted red peppers
  • 1 tbsp tahini paste
  • 1 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 ice cubes
  • Parsley to garnish

Preparation

  1. Preheat the oven to 180 degrees.

  2. Roughly tear the flatbreads and toss with the oil and zaatar spice.

  3. Spread on a baking tray and bake for 8-10 minutes until they start to crisp up.

  4. While the pitta chips are cooking, add all hummus ingredients except the ice cubes to a blender.

  5. Blitz until smooth, then add the ice cubes and blitz again for a silky finish.

  6. Plate up the hummus with a drizzle of olive oil and some parsley.
