Stewed Blueberries and Yoghurt on Toast

Ingredients

  • some frozen blueberries
  • a dash of water
  • coconut yoghurt
  • some fresh mint leaves
  • sourdough bread

Preparation

  1. Toast the sourdough bread until golden.

  2. Add frozen blueberries and a dash of water to a pan and let it bubble for 2 minutes.

  3. Top the toast with coconut yoghurt, the stewed blueberries, and some fresh mint leaves.

Tips

  1. This can be made with a mixture of berries or topped with nut butter for variation.
