Stewed Blueberries and Yoghurt on Toast
Ingredients
- some frozen blueberries
- a dash of water
- coconut yoghurt
- some fresh mint leaves
- sourdough bread
Preparation
Toast the sourdough bread until golden.
Add frozen blueberries and a dash of water to a pan and let it bubble for 2 minutes.
Top the toast with coconut yoghurt, the stewed blueberries, and some fresh mint leaves.
Tips
This can be made with a mixture of berries or topped with nut butter for variation.
