Vegan Bowl with Chili Cheese Potatoes

Ingredients

  • Lamb's lettuce
  • Cucumber rolls
  • Half an avocado
  • Broccoli sprouts
  • Radish
  • Tomato slices sprinkled with cracked tellicherry pepper
  • Pine nuts
  • Sriracha mayo

Chili cheese potato

  • 4 medium potatoes
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 1 tsp sriracha
  • 1 tbsp nutritional yeast
  • Black pepper to taste

Preparation

  1. Preheat oven to 175°C and line a baking tray with parchment paper.

  2. Wash potatoes carefully and cut into chunks.

  3. Mix a marinade using oil, soy sauce, sriracha, nutritional yeast, and black pepper, then coat the potato chunks with it.

  4. Place on the baking tray and bake for 25-30 minutes until browned.

  5. Assemble all bowl ingredients together in a bowl and serve.
