Vegan Mango Coconut Pudding Dessert
Ingredients
- 1 cup tender coconut flesh (chilled)
- 1/2 cup frozen mango
- 2-3 tablespoons coconut water
- 1/8 teaspoon salt
- 2 tablespoons date powder or preferred sweetener
- 1 teaspoon vanilla extract
- Juice of 1/2 a lemon
Preparation
Blend everything together in a blender except coconut water and lemon juice.
Slowly add the coconut water as needed to loosen the pudding.
Squeeze the lemon juice and blend for a few seconds.
Layer the pudding with chopped coconut pieces, mango chia jam or mango purée.
Top with more diced mango.
Chill for a few hours before serving.
Tips
For a creamier pudding, add half soaked cashews in place of tender coconut or replace it completely.
This dessert is light, super healthy, and diabetes-friendly.
