Vegan Mango Coconut Pudding Dessert

Ingredients

  • 1 cup tender coconut flesh (chilled)
  • 1/2 cup frozen mango
  • 2-3 tablespoons coconut water
  • 1/8 teaspoon salt
  • 2 tablespoons date powder or preferred sweetener
  • 1 teaspoon vanilla extract
  • Juice of 1/2 a lemon

Preparation

  1. Blend everything together in a blender except coconut water and lemon juice.

  2. Slowly add the coconut water as needed to loosen the pudding.

  3. Squeeze the lemon juice and blend for a few seconds.

  4. Layer the pudding with chopped coconut pieces, mango chia jam or mango purée.

  5. Top with more diced mango.

  6. Chill for a few hours before serving.

Tips

  1. For a creamier pudding, add half soaked cashews in place of tender coconut or replace it completely.

  2. This dessert is light, super healthy, and diabetes-friendly.
