Vegan Teriyaki Vegetable Stir-Fry

Ingredients

  • 2 cups of mixed vegetables (carrots, bell peppers, broccoli, snow peas)
  • 1/4 cup of vegan teriyaki sauce
  • 2 tablespoons of vegetable oil
  • 1/2 teaspoon of minced garlic
  • 1/2 teaspoon of minced ginger
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water
  • Salt and pepper to taste

Preparation

  1. In a small bowl, mix cornstarch and water to form a slurry and set aside.

  2. Heat vegetable oil in a large skillet or wok over medium-high heat.

  3. Add minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.

  4. Add the mixed vegetables and stir-fry for 4-5 minutes until they are tender-crisp.

  5. Pour in the vegan teriyaki sauce and the cornstarch slurry, stirring well to combine.

  6. Continue cooking for 1-2 minutes until the sauce thickens and coats the vegetables.

  7. Season with salt and pepper to taste, then remove from heat and serve immediately.
