Vegan Teriyaki Vegetable Stir-Fry
Ingredients
- 2 cups of mixed vegetables (carrots, bell peppers, broccoli, snow peas)
- 1/4 cup of vegan teriyaki sauce
- 2 tablespoons of vegetable oil
- 1/2 teaspoon of minced garlic
- 1/2 teaspoon of minced ginger
- 1 tablespoon of cornstarch
- 2 tablespoons of water
- Salt and pepper to taste
Preparation
In a small bowl, mix cornstarch and water to form a slurry and set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.
Add the mixed vegetables and stir-fry for 4-5 minutes until they are tender-crisp.
Pour in the vegan teriyaki sauce and the cornstarch slurry, stirring well to combine.
Continue cooking for 1-2 minutes until the sauce thickens and coats the vegetables.
Season with salt and pepper to taste, then remove from heat and serve immediately.
