Vegan Zucchini and Vegetable Stir-Fry

Ingredients

  • 2 tablespoons olive oil
  • 2 small zucchini, spiralized and patted dry
  • 2 tablespoons tomato purée
  • 1 jalapeño
  • 1/4 cup green pepper and onions
  • 1 tsp jalapeño powder
  • 1 tbsp nutritional yeast
  • 1 cup collard greens
  • 1/2 lb mushrooms, sliced

Preparation

  1. Heat oil in a skillet over medium heat.

  2. Add onions and green pepper.

  3. Add the tomato purée.

  4. Add and cook everything else for 4 to 5 minutes, or until translucent and tender.

  5. Stir in zucchini and continue to cook for 2 minutes.

  6. Add 1/8 cup warm water, mix and continue to cook for 5 minutes, or until zucchini is slightly tender.

  7. Remove from heat.

  8. Serve.
