Vegan Zucchini and Vegetable Stir-Fry
Ingredients
- 2 tablespoons olive oil
- 2 small zucchini, spiralized and patted dry
- 2 tablespoons tomato purée
- 1 jalapeño
- 1/4 cup green pepper and onions
- 1 tsp jalapeño powder
- 1 tbsp nutritional yeast
- 1 cup collard greens
- 1/2 lb mushrooms, sliced
Preparation
Heat oil in a skillet over medium heat.
Add onions and green pepper.
Add the tomato purée.
Add and cook everything else for 4 to 5 minutes, or until translucent and tender.
Stir in zucchini and continue to cook for 2 minutes.
Add 1/8 cup warm water, mix and continue to cook for 5 minutes, or until zucchini is slightly tender.
Remove from heat.
Serve.
