Vegetarian Carbonara with Garlic Bread

Ingredients

  • Trottole pasta
  • 6 The Laughing Cow lightest cheese triangles
  • Ground black pepper
  • Oxo meat free chicken flavour stock cube
  • Veggie bacon lardons

Garlic bread

  • Morrisons black pepper and sea salt bloomer
  • 1.5 teaspoons Lurpak spreadable
  • 1/4 teaspoon garlic puree
  • Sprinkle of garlic Italian seasoning
  • Grated mozzarella

Preparation

  1. Cook the trottole pasta until tender.

  2. Drain the pasta, reserving a little pasta water in the pan.

  3. Whisk the cheese triangles into the pasta water until a sauce forms.

  4. Add ground black pepper and the stock cube to the sauce.

  5. Pan-fry the veggie bacon lardons until cooked.

  6. Combine the fried bacon with the sauce and pasta and add more pepper to taste.

Garlic bread

  1. Mix the Lurpak spreadable, garlic puree, and garlic Italian seasoning.

  2. Spread the mixture over the bread slices.

  3. Top with grated mozzarella.

  4. Bake in a hot oven until the cheese is melty.
