Double Carb Carbonara Pasta

Ingredients

  • Boiled potatoes
  • Mezzi rigatoni pasta
  • 5 Laughing Cow extra light cheese triangles
  • Smoked cheddar
  • Bacon lardons or vegetarian substitute

Seasonings

  • Garlic Italian seasoning
  • Onion salt
  • Black pepper

Preparation

  1. Boil the potatoes until tender.

  2. Cook the mezzi rigatoni pasta for 12 minutes, then drain most of the water while leaving a little pasta water.

  3. Pan-fry the bacon lardons or vegetarian substitute until cooked.

  4. Stir the cheese triangles into the pasta until melted.

  5. Add the grated smoked cheddar to the pasta mixture and stir until thickened.

  6. Add the boiled potatoes and fried lardons, then gently stir through to combine.

Tips

  1. Use salad potatoes for better texture in the dish.

  2. Leaving some pasta water helps create a creamier sauce.
