Zucchini Oats Breakfast with Nutritious Toppings

Ingredients

  • 1 cups Rolled Oats
  • 1 1/2 cups Almond Milk
  • 1/2 cup shredded zucchini
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Toppings

  • Sliced Bananas
  • Blueberries
  • Hemp seeds
  • Nut butter
  • Pumpkin seeds

Preparation

  1. Turn small pot on high heat and add your plant based milk. Turn down to a simmer and add oats.

  2. Shred about half a small zucchini to get about 1/2 cup.

  3. Take oats off heat and add vanilla extract and shredded zucchini.

  4. Add toppings and enjoy!

Tips

  1. This is a perfect way to sneak veggies into your day and you may not taste the zucchini.
