Zucchini Oats Breakfast with Nutritious Toppings
Ingredients
- 1 cups Rolled Oats
- 1 1/2 cups Almond Milk
- 1/2 cup shredded zucchini
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Toppings
- Sliced Bananas
- Blueberries
- Hemp seeds
- Nut butter
- Pumpkin seeds
Preparation
Turn small pot on high heat and add your plant based milk. Turn down to a simmer and add oats.
Shred about half a small zucchini to get about 1/2 cup.
Take oats off heat and add vanilla extract and shredded zucchini.
Add toppings and enjoy!

This is a perfect way to sneak veggies into your day and you may not taste the zucchini.
