Chickpea Tumeric Patties

Ingredients

  • - 1 small onion
  • - 2 cloves of garlic
  • - 1 can rinsed and drained chickpeas (or 1 1/2 cups pre-cooked)
  • - small bunch of fresh parsley, roughly chopped
  • - 2 tbsp potato starch - 1-2 tsp of sea salt
  • - freshly ground black pepper
  • - 1 tsp turmeric powder
  • - 1/2 – 1 tsp cayenne pepper (optional)
  • - 2 tbsp chickpea flour + extra 3 tbsp for coating
  • - oil for cooking

Preparation

  1. In a large pan, drizzle in a little oil and fry the onion and garlic until slightly golden

  2. In a food processor, blend the chickpeas until they turn to a slightly textured paste. Add in onion, garlic, all the spices and mix to fully combine. Stir in the chopped parsley, flour and potato starch

  3. Take a large plate and sprinkle a few tablespoons of chickpea flour onto it. Scoop some of the mixture and form a patty with your hands. Drop into the chickpea flour to coat evenly

  4. Reheat that same large pan to medium heat. Drizzle in a little more oil and place the patties in to cook. Cook for about 2-4 minutes on each side until nicely browned

  5. Enjoy
