Chocolate Crepes with Berry Yogurt Filling
Ingredients
- 1 cup wholemeal spelt flour
- 3 tbsp buckwheat flour
- 1 tbsp flax seeds
- 1/2 tsp baking powder
- 2-3 tbsp cacao powder
- 2 cups almond milk
- 2 tbsp vanilla extract
- 1 1/2 tbsp maple syrup
- 1 pinch salt
Preparation
Add all ingredients to a bowl and combine them with a hand mixer or a whisk.
Let the batter chill for 20-30 minutes.
Heat a crepe pan over medium heat and add some coconut oil to it.
Add about 1/3 cup of batter to the pan, tilt it quickly but carefully to evenly distribute the batter over the pan.
Cook for about 1 minute, then flip and cook for another 30 seconds until the second side is cooked, repeat until all batter has been used.
Fill crepes with yogurt, jelly, fruits or other fillings you like.
