Delicious Blueberry Pancakes with Protein and Fruit

Ingredients

  • 1 egg
  • 1 small banana (mashed)
  • 1 scoop (25g) vanilla protein powder
  • 1 heaped tbsp oat flour
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • A handful of blueberries

Preparation

  1. Whisk the egg and mashed banana together then stir in the protein powder, oat flour and baking powder.

  2. Heat a pan with some olive oil over a medium to high heat and cook the pancakes 2 at a time.

  3. Once the mixture is on the pan, add blueberries in the middle, and flip when tiny bubbles start to form.

  4. Once cooked on both sides, serve up and drizzle with maple syrup.
