Vanilla Blueberry Muffin Protein Pancakes

Ingredients

  • 3 tbs aquafaba
  • 1 flax egg
  • 1/4 cup applesauce/soy yogurt and 1 tbs peanut butter
  • scoop of vanilla protein
  • 1/4 cup + 2 tbs buckwheat flour
  • 1/2 tsp baking powder and 1 tbs coconut flour
  • a splash of plant milk

Preparation

  1. I whisked together 3 tbs aquafaba, 1 flax egg, 1/4 cup applesauce/soy yogurt and 1 tbs peanut butter before adding a scoop of vanilla protein, 1/4 cup + 2 tbs buckwheat flour, 1/2 tsp baking powder and 1 tbs coconut flour

  2. Then a splash of plant milk to make it super creamy, and fold in the blueberries
