Vanilla Blueberry Muffin Protein Pancakes

Ingredients

  • 3 tablespoons aquafaba
  • 1 flax egg
  • 1/4 cup applesauce or soy yogurt
  • 1 tablespoon peanut butter
  • 1 scoop vanilla protein powder
  • 1/4 cup plus 2 tablespoons buckwheat flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon coconut flour
  • A splash of plant milk
  • Blueberries

Preparation

  1. Whisk together 3 tablespoons aquafaba, 1 flax egg, 1/4 cup applesauce or soy yogurt, and 1 tablespoon peanut butter.

  2. Add 1 scoop vanilla protein powder, 1/4 cup plus 2 tablespoons buckwheat flour, 1/2 teaspoon baking powder, and 1 tablespoon coconut flour, then mix well.

  3. Add a splash of plant milk to make the batter creamy.

  4. Gently fold in the blueberries.

  5. Heat a non-stick pan over medium heat and cook the pancakes until golden brown on both sides, flipping once.
