Vanilla Blueberry Muffin Protein Pancakes
Ingredients
- 3 tablespoons aquafaba
- 1 flax egg
- 1/4 cup applesauce or soy yogurt
- 1 tablespoon peanut butter
- 1 scoop vanilla protein powder
- 1/4 cup plus 2 tablespoons buckwheat flour
- 1/2 teaspoon baking powder
- 1 tablespoon coconut flour
- A splash of plant milk
- Blueberries
Preparation
Whisk together 3 tablespoons aquafaba, 1 flax egg, 1/4 cup applesauce or soy yogurt, and 1 tablespoon peanut butter.
Add 1 scoop vanilla protein powder, 1/4 cup plus 2 tablespoons buckwheat flour, 1/2 teaspoon baking powder, and 1 tablespoon coconut flour, then mix well.
Add a splash of plant milk to make the batter creamy.
Gently fold in the blueberries.
Heat a non-stick pan over medium heat and cook the pancakes until golden brown on both sides, flipping once.
