Simple Protein Pancakes with Blueberries

Ingredients

  • 1/2 cup flour
  • 1/2 cup vanilla protein/nutrition powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup almond drink (240 ml)
  • Mashed blueberries

Preparation

  1. Mix all dry ingredients together in a bowl

  2. In a separate bowl, combine wet ingredients including mashed blueberries

  3. Gradually add wet mixture to dry ingredients and stir to form a smooth batter

  4. Heat a non-stick skillet or griddle over medium heat

  5. Pour batter onto the heated surface to form pancakes and cook until bubbles appear on top

  6. Flip the pancakes and cook the other side until golden brown

  7. Remove from heat and serve immediately, optionally with additional toppings
