Fluffy Vegan Protein Pancakes

Ingredients

  • 50g oats
  • 150ml coconut milk
  • 1/2 banana
  • 25g soya protein
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Toppings

  • homemade nutella
  • agave syrup
  • banana
  • blueberries

Preparation

  1. Mix the dry ingredients: oats, baking powder, and baking soda in a bowl

  2. Mash the banana and combine with coconut milk and soya protein

  3. Combine the wet and dry mixtures to form a batter

  4. Heat a pan or griddle and cook the batter into pancakes until golden brown on both sides

  5. Top the pancakes with homemade nutella, agave syrup, banana, and blueberries
