Easy and Delicious Vegan Chocolate Pancakes

Ingredients

  • 1 cup of oat flour
  • 1 flax egg (1 tbs of ground flaxseed mixed with 2 1/2 tbs of water)
  • 1 banana
  • 1 tbs of cacao powder
  • 1 cup of plant based milk
  • 1/2 tsp of baking powder

Preparation

  1. Mix the flax egg ingredients together and let it sit for about 10 minutes to thicken up.

  2. Grind a cup of oats in a blender to make flour if needed.

  3. Mix the rest of the ingredients in a blender including the flax egg.

  4. Over medium heat, pour about 3-4 tablespoons of the batter at a time and cook for about 3 minutes on each side.

  5. Enjoy the pancakes.

  6. Save this recipe and make a double or triple batch; they are great reheated in a toaster for a quick breakfast or as a snack in a lunch box.
