Easy and Delicious Vegan Chocolate Pancakes
Ingredients
- 1 cup of oat flour
- 1 flax egg (1 tbs of ground flaxseed mixed with 2 1/2 tbs of water)
- 1 banana
- 1 tbs of cacao powder
- 1 cup of plant based milk
- 1/2 tsp of baking powder
Preparation
Mix the flax egg ingredients together and let it sit for about 10 minutes to thicken up.
Grind a cup of oats in a blender to make flour if needed.
Mix the rest of the ingredients in a blender including the flax egg.
Over medium heat, pour about 3-4 tablespoons of the batter at a time and cook for about 3 minutes on each side.
Enjoy the pancakes.
Save this recipe and make a double or triple batch; they are great reheated in a toaster for a quick breakfast or as a snack in a lunch box.
