Delightful Puy Lentil and Feta Salad
Ingredients
- 1 x 250g Merchant Gourmet Simply Cooked Puy Lentils
- 3 baby courgettes
- 1 small onion
- 60g feta cheese
- 100g of sweet peppers
- 100g cucumber, cubed
- handful of fresh mint
- Drizzle of olive oil
- Salt and pepper
Preparation
Slice the baby courgette, onions and pepper and cube the cucumber.
Heat a pan with a drizzle of olive oil.
Fry the courgette until golden then add the onions, pepper and cucumber.
Once the onions are translucent add the Puy lentils and feta until warm through.
Season to taste then serve.
