Snap Peas and Green Bean Salad
Ingredients
- Fresh snap peas
- Fresh green beans
- Green onions
- Cilantro
- Tomatoes
- 2 tablespoons olive oil
- 1/2 cup feta cheese
Seasonings
- Salt to taste
- Pepper to taste
- Garlic powder to taste
- Lime juice from about 3 limes
Garnish
- Pickled jalapeño pepper
Preparation
Wash and trim the snap peas and green beans.
Chop the green onions, cilantro, and tomatoes.
In a large bowl, combine all the vegetables, olive oil, and feta cheese.
Season with salt, pepper, garlic powder, and lime juice.
Garnish with pickled jalapeño pepper.
Serve as a salad or as a dip with chips.
