Cheesy Vegetable and Quinoa Bake

Ingredients

  • 1 medium onion, chopped finely
  • 1 large red pepper, chopped
  • 100g broccoli, cut into florets
  • 1 tin (400g) mixed beans in chilli sauce
  • 1 tin (400g) chickpeas, drained
  • 180g (approx 1 cup) quinoa
  • 1 tin (400g) tinned tomatoes
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil
  • 200ml veggie stock
  • 60g cheese, grated

Preparation

  1. Heat olive oil in a large pan and add the onions.

  2. Cook on a high heat for a few minutes then add the chopped pepper.

  3. Cook for a few more minutes until the onions are cooked and then add the beans, tomatoes and chickpeas.

  4. Add the veggie stock, quinoa and spices then lower the heat and leave to simmer for 25 minutes until the quinoa is cooked.

  5. Add in the broccoli then transfer to a big oven safe dish.

  6. Top with cheese and bake in the oven for 15-20 minutes at 180 degrees Celsius.
