Fiesta Tempeh Bowl

Ingredients

  • 2 tbsp olive oil
  • 8 oz. tempeh, crumbled
  • 2 cloves garlic, minced
  • pinch of red pepper flakes
  • pinch of salt
  • 1 tsp tomato paste
  • 1/2 tsp maple syrup
  • salt and pepper to taste
  • tahini dressing:
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1/2 tsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper

Preparation

  1. In a skillet, heat oil over medium heat. add crumbled tempeh and garlic. cook for 3-4 min. until golden brown. add in the rest of the ingredients and cook for 2-3 min. adding a tbsp of water if dry

  2. Combine all tahini ingredients until creamy. whisk in 1-2 tbsp of water until desired consistency

  3. Serve tempeh with brown rice, sautéed veg, avocado, lime, salsa, and drizzle on tahini dressing
