Fiesta Tempeh Bowl
Ingredients
- 2 tbsp olive oil
- 8 oz. tempeh, crumbled
- 2 cloves garlic, minced
- pinch of red pepper flakes
- pinch of salt
- 1 tsp tomato paste
- 1/2 tsp maple syrup
- salt and pepper to taste
- tahini dressing:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1/2 tsp maple syrup
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
Preparation
In a skillet, heat oil over medium heat. add crumbled tempeh and garlic. cook for 3-4 min. until golden brown. add in the rest of the ingredients and cook for 2-3 min. adding a tbsp of water if dry
Combine all tahini ingredients until creamy. whisk in 1-2 tbsp of water until desired consistency
Serve tempeh with brown rice, sautéed veg, avocado, lime, salsa, and drizzle on tahini dressing
