Grilled Asparagus and Shiitake Tacos

Ingredients

  • 3 tablespoons canola oil
  • 4 garlic cloves
  • 1 teaspoon ground chipotle chile
  • 1/2 teaspoon kosher salt
  • 8 ounces shiitake mushrooms
  • 1 bunch asparagus
  • 1 bunch green onions
  • 8 corn tortillas
  • 1 cup guacamole
  • Lime wedges
  • Cilantro sprigs
  • Hot sauce

Preparation

  1. Heat the grill on medium. In a large baking dish, combine the oil, garlic, chipotle, and salt. Add the asparagus, shiitakes, and green onions and toss to coat.

  2. Grill the asparagus until tender and lightly charred, turning occasionally, for 5 to 6 minutes.

  3. Grill the shiitakes and green onions until lightly charred, turning occasionally, for 4 to 5 minutes.

  4. Transfer the vegetables to a cutting board.

  5. Cut the asparagus and green onions into 2-inch lengths and slice the shiitakes.

  6. Serve with corn tortillas, guacamole, lime wedges, cilantro, and hot sauce.
